Now THIS is the hometown gastropub that Carlsbad needed!! Came here tonight with my dad looking for a tasty burger and beer, and boy did Ebullition deliver. The waiter/bartender today around happy hour, who was tall and had a beanie on, was just awesome and helped me pick a beer. I should have asked for his name. He let me take a taste of the Attaboy and the Green Ghost, and we both agreed that the Green Ghost was delicious! Who doesn't love some good hops?! My dad and I both ordered the Ebullition burger with everything on it. I would have posted a picture, but I ate it so fast on sight that I forgot to even take a picture! But it was very very tasty. My patty was thick and medium rare as requested, and the cheese/sauces were high quality! And the seasoned fries I got on the side were delicious as well. I didn't get to eat many because my dad ate almost all my fries! So, he recommends the side of fries over the side salad for sure. If you haven't been to Ebullition yet then you're missing out! Great food, great drinks, great staff, and a great atmosphere. A wonderful addition to the new Bressi Ranch restaurants!

First time in, and my hubby and I had an awesome experience! First, the ambiance- airy cute indoor/outdoor seating options with a modern industrial vibe. Good for groups or small parties and dog-friendly. We sat outside which was quite nice, people watching and just enjoying the our lovely north county weather. Drinks- Hubby really liked their hazy ipa and also the strawberry ale (which even I, more of a wino, really enjoyed- fragrant strawberry nose and balanced light flavor, not overly sweet or fruity). Food- wow, we had the Pork Belly dip which was a huge standout- rich pork belly, cut perfectly with the pickled jalapeño, rich melted Guyere? white cheese and must-add carmelized sweet onions. Then dipped in this house made rich oxtail beef au jus = heavenly rich complex flavors. Also it was not as heavy rich as I was expecting, probably thanks to the balanced flavors. We also had the award winning Mac and cheese (excellent comfort food creamy with chunks of Smokey ham) and the fish and chips (perfectly fried fish and fries with yummy tartar, vinegar and ketchup) both also delicious and well-executed. Service was warm, welcoming and friendly- we had the pleasure of meeting and being helped by Eric who is the co-owner. Highly recommend this family run local spot- quality, creative and amazing food paired with good drinks and kind service. Looking forward to coming back!
